Should I buy food and products that support workers in Third World by buying Fairtrade labelled products even though these goods normally travel thousands of miles from Africa, South America or South East Asia? What if these foods were produced with the use of pesticides and additives? It makes sense then to look for and to buy Fairtrade, organic food to both help the producers in the Third World and fulfil my lifestyle choice to eat healthy and additive/pesticide free food. Thankfully, many producers are now wising up to this dilemma by increasingly producing organic and Fairtrade labelled products. I am currently using Fairtrade, organic t-bags at home! Now comes another important question, should I buy Fairly Traded organic sugar from Kenya that has travelled thousands of miles, or should I buy apples grown in the UK (ideally from a farmers market) that have only travelled only a few hundred miles which means less carbon dioxide and other nasty emissions from the lorries that you see constantly on the motorways in the UK? Buying UK products not only ensures less food miles but also supports local farmers, communities and economies. Unfortunately, choice is often limited and can be more expensive then food produced in other countries--- Decisions, decisions, it's probably best to abstain from eating and give your choice making brain a rest!

But I can safely say that I make attempts to avoid food or products that have travelled from far away destinations such as Australia even if they are organic! Next time you are in the supermarket or wherever you buy your food from check the labels and you will be surprised by how far your food has travelled. Also look at the amount of unnecessary wrapping such as individually wrapped peppers, mushrooms and kiwi fruit in wrapped boxes. When I buy from the local market I tell them to throw it all into one bag, the customer next to me often has 10 individually wrapped portions of fruit and veg. That's 11 (10 plus one big plastic bag) bags into the landfill site that day. For maximum eco efficiency we need to be using jute or other bags made from recycled materials and putting all the loose food into that.

Preparation is the key when you're going to cook asparagus.  There are several methods of cooking boiling, grilling, steaming, or roasting.  The microwave is also a good option when cooking asparagus.  Cut the asparagus into sections and you can use it in stirfries you can also blanch the asparagus and use it in vegetable dips.  Of course, there's nothing like steamed asparagus with butter, salt, and pepper.

When buying asparagus make sure that it is fresh, the asparagus will taste much better and can be kept for two to three days when properly stored.  Once you get the asparagus home and ready to prepare, you'll need to trim it.  The easiest way to trim asparagus before cooking is to simply do it by hand by bending the stock until it breaks.  If it will not break but only bends, it is probably old and will not be as fresh as you would like it.  Some cooks prefer to peel the bottom of the stocks this is not really necessary but sometimes helps when the stocks are a little woody.  Contrary to popular belief the thicker asparagus is actually more flavorful than the pencil thin variety that most people want to buy.

An easy way to peel asparagus if you decide to go that route, is to lay a stalk on the counter or a cutting board and use a vegetable peeler. Starting at the top of the asparagus peel all the way to the end.  The main reason anybody would peel asparagus, as I mentioned above, would be to make the asparagus more tender.  You don't need to completely peel the asparagus either, simply peel down one one side to allow moisture to enter the asparagus while it is cooking.

If you want to steam the asparagus here is a simple method. After you have timmed your asparagus to the size you need, and optionally peeled it, place them in a saucepan and about an inch of water.  Another steaming method you can use when cooking asparagus is to stand them vertically.  Make sure you tie the bundles at the bottom and the top so they don't fall over in the pan.  They should steam for approximately 5 to 10 minutes depending on the thickness.

Boiling is a great way to cook asparagus also.  You want to use just enough water to cover the asparagus but make sure all the stems face the same direction and are covered with water.  The asparagus will take between four to six minutes to cook completely, but again that depends on the size.

One method I really enjoy is using the grill.  Cooking asparagus on the grill either directly over the fire or on skewers gives a great smoky flavor.  Depending how you like them, cook the asparagus for anywhere from 30 seconds to 10 minutes.  Another great way to cook the asparagus is to wrap them in foil with a little bit of olive oil and salt and pepper and cook them on the grill for 10-20 minutes.  You'll have a great treat.

On those winter days when you really don't want to cook asparagus on the BBQ, another great option is roasting.  Simply heat the oven to 425? F, and lay the asparagus flat on a baking sheet lined with foil.  You can put any seasoning you want on the asparagus when roasting; salt, pepper, lemon pepper or any other spice that you have on hand are good.  You will be rewarded with a nice tender stalk with a roasted flavor in about two to three minutes.

Organic olives are used in the production and many people say that the taste is superior to non organic olive oil. Olives are typically grown in the Mediterranean, with its hot dry summers and cool winters it is the ideal habitat of the olive tree. Olive oil is the oil obtained from the fruit of the olive tree in a mechanical manner. The liquid is pressed out of the olives. Organic olive oils are often picked and crushed by large stone rollers without the use of any mechanical machinery or unnatural processes. Expensive virgin oil is sometimes labelled in a way that you can trace exactly where the oil has come from. The bottle and tin can be numbered and this enables the buyer to identify from which trees the olive oil of each individual container came from.

As well as organic oil, fairtrade oil is increasingly available. The Fairtrade principal involves democratic organisation where producers have maximum control over their land and are often formed into co-operatives. Trade Unions are allowed, no child labour is used in the production and a decent wage is paid to the workers that pick the olives and produce the oil. The Fairtrade Mark means that a social premium is paid on the product which doesnt go to the individuals, it goes to the organisation or communities for development projects such as health, education and sanitation.

Growing up in Midwest America, there is one thing that always brought a smile to my face: soft serve ice cream. I was and remain a very healthy individual, but there was something about this delectable dessert, covered in those scrumptious wonders known only as "sprinkles" that I couldn't resist. But from an early age, I always wondered, "How is soft serve ice cream made?" And, perhaps more importantly for me at that time, how could I possibly buy once of those magical devises?

But wait. What does this personal anecdote possibly have to do with Margaret Thatcher.

I'm getting there. But I digress.

Many years later, while I have shook off the shackles of my soft serve infatuation, I still wondered. It turns out that the story of soft serve ice cream has an interesting origin involving one of the twentieth century's greatest Cold War politicians, Margaret Thatcher. In the mid-20th century, she worked on a chemical research team in Britain, uncovering a method of dramatically increasing the amount of air in ice cream---allowing manufacturers to use less of the actual ingredients and reducing their costs per serving significantly.

Does that mean that my lust for soft serve ice cream was hot air? Well, maybe, but I dug further.

Generally speaking, soft serve ice cream is a slightly different form of ice cream that is dispensed from a machine instead of by hand. Significantly lower in fat content than traditional hard ice cream, soft serve is produced at a warmer temperature than ice cream, resulting in a special property that can explain its unsurpassed taste. By having a warmer temperature, the human taste buds can actually detect more flavor.

As you may have guessed, the proper combination of temperature and air is fundamental to the taste of the finished product. Soft serve produced with lower amounts of air results in a icy, heavy tasting product. On the other hand, soft serve produced with higher amounts of air typically taste creamier, smoother and lighter. Generally speaking, the air content should optimally be between 35 percent and 45 percent of volume. Like traditional ice cream, soft serve ice cream must be frozen quickly to avoid crystallization.

Now that I've finally unlocked the mysteries of the magic ice cream machines, I'm off to satisfy my sweet tooth. Thank you Margaret Thatcher.

El uso de camiones refrigerados para transportar altamente perecedero y alto valor producción mantendrá su calidad sobre una duración prolongada. En furgonetas no ventilados, temperatura de las frutas o verduras se eleva rápidamente, aumento de la respiración y decaimiento.

Tips For Slow Cooker And Crock Pot Cooking

For the stressed out cook nothing is better than the flexibility and versatility of a slow cooker or crock-pot. You would be amazed at how much time you can save with a few cooking tips and a crock-pot! No pots, pans or serving dishes to deal with, just throw it all together set the cooking temperature and go about your daily life. Later when you come in the smell of dinner already steaming is enough to relieve the stress of any hard day at work.

If one doesn't already have a slow cooker, the first consideration centers on size. Small versions are often used for appetizers, dips, and salsas. Generally these are 16 oz. or quart size and are perfect for serving during brunch or potluck dining events or cooking for one. A large family may be best served with a 5 qt. or even a 7 qt. model. The type of cooking one does is also a consideration. If the cook plans on slow cooking a full rack of fall off the bone baby back ribs in the crock pot, they are going to have to spring for the larger version.

Another consideration is whether the cook wants to be able to set or control the temperature or just go with a push button model that cooks with preset low or high temperature settings and sometimes a warmer setting. If the "low" setting is too low and the lid is not on properly, the cooking temperature can drop below the safe level for cooking some foods. Finally, the question of heating elements needs to be considered. Crock pots can come with bottom, side elements or both. Pots with side elements often require more liquid in recipes to avoid the risk of drying up over long cooking times.

If you are the type of person who enjoys experimenting with cooking tips and mixing, it up in the kitchen a slow cooker will be your new best friend. There are tons of recipe possibilities and you might even have a little fun in the process. Where the crock-pot/ slow cooker really excel is in cooking cheaper cuts of meat and making them nice and tender. Crock pots are so versatile that they can even be used for creating desserts and breads. Interestingly enough this is one area where care must be taken during preparation. This is particularly true if these recipes are going to be left unattended while they cook. An over beaten or whipped dessert can raise the lid straight off of the crock pot and create quite a mess. This is certainly not what one needs to come home to after a long day at work.

You can make almost anything in a slow cooker from simple cream cheese layer dip to pot roast, veggies, and even complex meals such as spicy paella. They also function as an excellent warmer for your holiday side dishes. With a few good cooking tips, a slow cooker can take the stress right out of a busy day.

Never add water to the crock-pot unless it specifically says to do so. Always allow cakes and breads to sit and cool for five to seven minutes before taking them out of the pan.

Vegetables like potatoes and carrots should be cut no larger than 1" thick, and put in the bottom of the pot, since they require more time to cook. Crock-pot cooking can be delicious for both meals and desserts when some basic guidelines are followed.

Of course, you can also place three tortillas in the microwave on an appropriate plate covered with a moistened paper towel for 20 seconds for a nice warm tortilla experience.

Fresh fruit tends to turn brown after being handled or sliced. Whether you are slicing into an avocado, a peach, strawberries, or apples, try coating with a small bit of lime or lemon juice. The ascorbic acid helps the oxidation associated with the browning.

Grabbing for the nearest glass of water after biting into a hot pepper or chili is natural reflexes kicking in. However, the chemical that causes that burning discomfort is made worse by water. Instead, grab milk or ice cream. This will help alleviate the discomfort.

Take the seeds out with a spoon, and place the peppers on a baking dish sprayed with non stick spray. Place in a preheated 400 degree oven for 10 20 minutes depending on the oven. This is delicious and easy.

Cooking spray is popular these days. However, if you use a cooking spray, use an olive oil cooking spray. It tastes a whole lot better and is significantly healthier for you and your family.

Frozen food generally is a great way to feed your family on those evenings when something quick is needed. However, you should remove and toss any food that is over 3 months old. The food will become freezer burned and distasteful.

Often people wonder about the heat rating of a crockpot, especially when the directions on the recipe indicate the ingredients should be cooked on LOW. The low temperature on a crockpot is 200 degrees F, which is high enough to cook just about any food and since a lot of crockpot recipes call for the low setting, should ease your mind about whether or not the food will cook properly. A good measurement to remember is that high heat cooking is about twice as fast as cooking on low, so a recipe is correct if it instructs you to cook on high for 3 hours or low for 6 hours.

Some people put the crockpot on high and cook the food for an hour first, which lessens the chance of contamination from bacteria caused by the food not heating up fast enough. Then the heat is turned to low to finish cooking.

Using a meat thermometer will help determine how close to done meats are. Remember not to lift the lid too often, though, as that lets the temperature drop. It is best to check at the end of the cooking time and then test for doneness. Food can always cook a bit longer in a crockpot, if it is needed.

Chicken varies according to the piece you are checking; the breast must be at least 170 degrees F and the thigh at least 180 degrees F. Ground meats are safe to eat once they reach 160 degrees F, while roasts will measure 145 degrees F for medium rare meat, 160 for medium and 170 degrees F for well done. Even casseroles, stuffing, and soups can be tested for doneness and should give a reading of at least 165 degrees F at the end of the cooking time.

The Secret to Cooking for a Crowd


Having a large family growing up, I learned to cook in a big way. With 5 brothers and 3 sisters plus Mom and Dad, I started out cooking for eleven people by the time I was twelve and most of the time without a recipe. Mom needed help and taught her daughters to cook at an early age. I'll never forget the first time I fried chicken all by myself. My brothers ridiculed my over-done chicken mercilessly.

I'll never forget the first meal I cooked away from home. My sister and I moved out together, just the two of us, and, after settling in, prepared our first meal for just us. We cooked like we were taught: 5 pounds of potatoes for mashed potatoes, 2 whole chickens for fried chicken, 2 quarts of green beans. To this day, we still laugh about all that food we had left over.

So needless to say, cooking for a large gathering is no problem for me. I take on the task of hosting my husband's family for Thanksgiving and while most people worry about having a dry turkey, my biggest dread is cleaning the house.

So what is the secret to cooking large? Like cooking any size meal, the secret is in the planning. You will need extra and larger everything. Take your recipes and list all the ingredients you need to buy. Plan your menu, inventory your serving dishes, pots and pans, plates, forks, knives, spoons, drinking glasses at least a week in advance. Buy everything you need ahead of time, right down to butter for bread and ice for drinks.

Once you have your menu and inventory planned, jot down a time schedule. Have the house cleaned and seating arrangements completed the day before so you can focus on the meal, otherwise you'll be pulling your hair out trying to get everything done on time. The easiest thing to cook is a one-dish meal, like pot roast or lasagna with few side dishes.

· Main dish, Pot Roast w/carrots and potatoes

o cook in roaster, 3-hour oven time, serve on platter

· Side vegetable, steamed broccoli

o cook in 3 qt. steamer, 20 min stove top time, serve in blue bowl

· Bread, buy brown and serve rolls (or make from scratch ahead of time)

o oven time 15 minutes, last thing to cook, serve in basket, buy new towel

After detailing each dish, make a timetable. Example, for a 6:00 dinner:

2:00 Start pot roast; have in oven by 2:30

4:00 Peel potatoes, slice carrots; add to pot roast by 4:30

4:30 Set tables

5:15 prepare broccoli, start to cook by 5:35

5:35 Prepare rolls for cooking, in oven by 5:45

5:45 Transfer pot roast to platter

5:55 Transfer broccoli to bowl

6:00 Bread's done, transfer to basket and cover with towel

Sit down to delicious meal and enjoy. And for your test, I now present the world's best pot roast recipe. It's my own, passed to me from my Mom.

Pots you'll need:

oven going roasting pan

10-inch skillet

1 or 2 Chuck roasts (2-3 lbs ea.)

1 large or 2 med. onions, sliced

6 carrots (or more as needed)

6 potatoes (or more as needed)

1 can onion soup +1/2 can water*

Can mushroom soup (or golden mushroom)

1/4 tp.salt or Murray's Seasoning Salt

1-2 cup mushrooms (optional)

*2 cans for 2 roasts, or substitute

1-2 pkg. onion soup mix, per directions.

Heat oven to 350 degrees.

1. In large oven roasting pan, add onion soup and water.

2. Slice onion and add 1/2 to bottom of roaster. Set aside.

3. Heat skillet on high on top of stove. When hot, sear roast on all sides until brown on the outside.

4. Place seared roast(s) on top of onion/onion soup in roaster.

5. Sprinkle with salt.

6. Cover with remaining onion slices and can of mushroom soup, undiluted (optional)

7. Cover with alum foil, sealing tightly and put in oven.

8. Set timer to cook for 1 hour for 1 roast, 2 hours for 2 roasts.

9. Peel potatoes and cut into quarters.

10. Slice carrots.

11. When timer goes off, add potatoes, carrots, and mushrooms. Cover and cook for 1 more hour.

Done when vegetables are tender. Time may have to be adjusted depending on how many vegetables there are. I have filled the pan to the brim and had to cook an additional 1/2-hour.

You can eat this roast with a fork it is so tender. You can substitute a sirloin roast, but chuck works best in my opinion.

Ummm-Ummm Good Comfort food! And so pretty on the plate. I hope you

PS. Use those leftovers: This is not a recipe, per say. It's a throw-it-all-in-a-pan type thing. Get some beef stroganoff soup mix and dry egg noodles. Cook the soup, cook the noodles and combine in large skillet. Chop up left over pot roast, vegetables and all, and add to skillet along with left over juice. Heat thoroughly and enjoy!
